Save the extra cordial for breakfast cocktails, sweets, or for another batch of the drink.
Bikini Recipe
Makes enough for 10 people
For the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Cocktail (yields 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Method
Making the Cordial: Place every components in a pot, heat until it reaches a light boil, stirring so the sugar melts. Next, remove from the burner allowing it to cool down entirely. Transfer to a sealable bottle, cap it and refrigerate it chilled, it will last for up to four weeks.
For the Premix: Combine the specified liquids into one large bottle, leave to sit for an hour, then pass it through preferably using a fine cloth, so it's fully clarified.
When ready to serve: Add 85ml from the batch mix into a stirring glass packed with ice, and stir gently for a minute to cool it down. Pour into a frosted cocktail glass or a similar vessel, decorate with some cranberries and complete it by giving it a brief mist with the mandarin essence over the top.
